- 1 ripe avocado scooped
- 2 tbsp lime juice
- 1 tbsp fresh peppermint leaves washed
- 1 garlic clove peeled & washed
- 1/4 cup green olives Lindsay brand
- 4 tbsp extra virgin olive oil
- 1 pinch salt
- 3 tbsp Juice from olives
- Place all ingredients in blender. Blend until smooth.
- Pour over salad, cooked quinoa or your favorite grain.
