
Breakfast Potato Casserole
Ingredients
- 1/4 cup coconut oil
- 1 1/2 onion chopped
- 3 garlic cloves diced
- 4 pimento peppers
- 1 red pepper
- 1 yellow pepper
- 1 tbsp chicken-style bouillon plant based
- 1/4 cup water
- 2 1/2 cup TVP Texturized Vegetable Protein
- 3 lbs spud puppies tater tots
- 1 bag daiya mozzerella cheese
- 1 bag daiya cheddar cheese
Instructions
- Hydrate TVP in 3 cups of water (drain excess water)
- Sauté onion, garlic, peppers in coconut oil in a skillet
- Add water to bouillon, mix, and add to skillet
- Stir TVP with mixture until cooked
- Layer casserole dish with TVP mixture, cheese, and then spuds
- Bake at 350 degrees Fahrenheit for 30 minutes
