Breakfast Potato Casserole

Ingredients
  

  • 1/4 cup coconut oil
  • 1 1/2 onion chopped
  • 3 garlic cloves diced
  • 4 pimento peppers
  • 1 red pepper
  • 1 yellow pepper
  • 1 tbsp chicken-style bouillon plant based
  • 1/4 cup water
  • 2 1/2 cup TVP Texturized Vegetable Protein
  • 3 lbs spud puppies tater tots
  • 1 bag daiya mozzerella cheese
  • 1 bag daiya cheddar cheese

Instructions
 

  • Hydrate TVP in 3 cups of water (drain excess water)
  • Sauté onion, garlic, peppers in coconut oil in a skillet
  • Add water to bouillon, mix, and add to skillet
  • Stir TVP with mixture until cooked
  • Layer casserole dish with TVP mixture, cheese, and then spuds
  • Bake at 350 degrees Fahrenheit for 30 minutes
  • Eat and drink-to the glory of God! 1 Corinthians 10:31
