Cashew Hummus

Nut your ordinary kind of hummus!

  • 1 1/4 cup raw cashews
  • 2 Tbs. tahini
  • 2 Lemons (just the juice)
  • 1/4 cup olive oil
  • 1/2 tsp. onion powder
  • 1/2 tsp. garlic powder
  • 1/2 tsp. sea salt
  • 1/2 tsp. smoked paprika
  • 1 tsp. chicken style seasoning Vegetarian Express


  • Soak cashews overnight in a bowl of water.
  • Drain the nuts and place them in a blender with tahini, lemon juice, olive oil, onion and garlic powder.
  • Process to a smooth paste.
  • Gradually add a tablespoon of water to adjust consistency to suit your preference.
  • Stir in salt and chicken style seasoning.
  • Taste and adjust the seasoning with salt.
  • Transfer to a small dish and serve with a dusting of smoked paprika.
