
Cashew Hummus
Ingredients
- 1 1/4 cup raw cashews
- 2 Tbs. tahini
- 2 Lemons (just the juice)
- 1/4 cup olive oil
- 1/2 tsp. onion powder
- 1/2 tsp. garlic powder
- 1/2 tsp. sea salt
- 1/2 tsp. smoked paprika
- 1 tsp. chicken style seasoning Vegetarian Express
Instructions
- Soak cashews overnight in a bowl of water.
- Drain the nuts and place them in a blender with tahini, lemon juice, olive oil, onion and garlic powder.
- Process to a smooth paste.
- Gradually add a tablespoon of water to adjust consistency to suit your preference.
- Stir in salt and chicken style seasoning.
- Taste and adjust the seasoning with salt.
- Transfer to a small dish and serve with a dusting of smoked paprika.
