
Chickpea Tuna Salad
Ingredients
- 1 15oz can chickpea
- 1/4 tsp onion powder
- 1/4 tsp smoked paprika
- salt to taste
- 1/2 orange or yellow bell pepper finely diced
- 2 stalks celery finely diced
- 1-1/2 tbsp mayo homemade; see link for recipe below
- 2 tbsp vinegar-free relish Pa's Pickle Relish
- 1/2 tbsp nutritional yeast flakes
Instructions
- Using a mesh strainer, drain and rinse chickpeas.
- In mixing bowl, add chickpeas and mash with fork until you reach desired texture.
- Mix in celery and bell pepper. Add mayo, relish, yeast flakes, onion powder, paprika, salt and mix until thoroughly incorporated.
- Serve in lettuce wraps, on a sandwich or with crackers.
