
Coconut Creamy Grits
Ingredients
- 2 cups water
- 1 cup coconut milk
- 1 cup corn grits
- 2 tsp. sea salt
Instructions
- Bring to boil the water and coconut milk
- Stir the grits into boiling water & milk mixture.
- Add salt and continue to stir.
- Lower heat and continue to stir for 5 minutes. Remove from heat and cover for another 7 minutes undisturbed. Serve immediately

I made this for my husband and myself, but I changed the recipe a bit. I have cans of coconut water so I used one can and left out the water and coconut milk. It was sensational. It gives grits a whole different taste. No need to load the grits up with butter, (margarine), cheese sauce, or sugar. By the way since it was just the two of us I cut the recipe in half so one can of coconut water was perfect. I plan on trying many more recipes and leaving comments as I try them.
