
Coconut-Oat Waffles
Ingredients
- 3 cups water or nut milk
- 1/4 cup coconut oil
- 3 cups oats
- 1/2 cup walnuts
- 1/4 cup flaxseeds
- 1/4 cup coconut
- 1 tsp salt sea salt
- 1 Tbsp vanilla (non-alcohol)
- 4 Tbsps agave organic
- sesame seeds (optional)
Instructions
- Preheat waffle iron according to desired texture (soft or crispy; see note below).
- Blend all ingredients (except sesame seeds) together until smooth.
- When waffle iron is hot, coat the griddle with non-stick cooking spray.
- If you're opting to use the sesame seeds, sprinkle some on the bottom griddle for easy removal and enhanced flavor.
- Pour batter in (and if you're opting to use the sesame seeds, sprinkle some more on top of the batter).
- Close lid and bake (see note below for details).
- Eat and Enjoy - to the Glory of God! (1 Corinthians 10:31)

I have made many vegan waffles before but these were the best we have had!

I did make a couple substitutions I will mention: substituted maple syrup for the agave and pecans for walnuts and did opt to use the seseame seeds… flavorful, nutty and satisfying!
