Coconut Raisin Rice for Breakfast

Sweet and nice coconut raisin rice!
Prep Time 5 minutes
Cook Time 30 minutes
Total Time 35 minutes


  • 2 cups brown rice
  • 3/4 cup coconut milk
  • 1/2 cup unsweetened Coconut Shreds
  • 1/2 cup raisins
  • 1/2 tsp. sea salt
  • 1 tsp. coriander
  • 1 tsp. vanilla non-alcoholic


  • Combine all ingredients in baking dish
  • Cover dish with parchment paper and foil
  • Bake at 350 for 30 minutes
  • Served with scrambled tofu (with the sweet and savory) or simply enjoy with fresh fruits
  • Eat & Enjoy-to the glory of God! (1 Corinthians 10:31)
