
Coconut Raisin Rice for Breakfast
Ingredients
- 2 cups brown rice
- 3/4 cup coconut milk
- 1/2 cup unsweetened Coconut Shreds
- 1/2 cup raisins
- 1/2 tsp. sea salt
- 1 tsp. coriander
- 1 tsp. vanilla non-alcoholic
Instructions
- Combine all ingredients in baking dish
- Cover dish with parchment paper and foil
- Bake at 350 for 30 minutes
- Served with scrambled tofu (with the sweet and savory) or simply enjoy with fresh fruits
