Cornmeal Porridge

Packed with a plethora of nutriment, this creamy golden cornmeal goodness is just what you need to fuel and warm you up on a cold winter morning or maybe a chilly afternoon!

Total Time 20 minutes

Servings 5 cups


  • 4 cups water
  • 1 cup cornmeal yellow
  • 1/2 tsp salt sea salt
  • 1 cup coconut milk
  • 1 tbsp unbleached flour (or 2 Tbsps oat flour, if gluten intolerant).
  • 1/4 tsp cardamom
  • 1 tsp vanilla (non-alcohol)
  • 1/4 tsp coriander
  • 1/2 cup cane sugar organic


  • Place water, cornmeal and salt in a 2 quart pot. Bring to a boil, stirring constantly.
  • Reduce heat and cover. Let simmer for 7 minutes, stirring constantly.
  • Mix together (separately) coconut milk, flour, cardamom, vanilla, and coriander. After well mixed, add into the cornmeal.
  • Cook for about 5 minutes to thicken, stirring constantly.
  • Stir in the cane sugar and sweeten to taste.
  • Serve in a cereal bowl, while still hot.
  • Eat and Enjoy - to the Glory of God! (1 Corinthians 10:31)

    My family and I tried this recipe ( our first time having porridge). It is so good. The kids love it. The recipe is perfect as the porridge isn’t too sweet, but just right. I did try some with a little honey and it was even more heavenly. I really liked that it was simple and quick to prepare. We will be having this more often.
