Curry Potatoes

You don't want to eat this curry in a hurry. Take your time; enjoy yourself! 

Ingredients
  

  • 1 tbsp coconut oil
  • 1 onion chopped
  • 4 cloves garlic minced
  • 2 tsp turmeric
  • 1 1/2 tsp cumin
  • 1 tsp coriander
  • 1 tsp thyme leaves
  • 1 tomato chopped
  • 4 white potatoes chopped
  • 1 carrot diced
  • 1 1/2 cup cooked chickpeas or 1-15oz can of chickpeas
  • 1 15oz can coconut milk 400ml
  • 1 cup water
  • 1/2 cup frozen green peas
  • 1 tbsp bouillon

Instructions
 

  • On med. heat, Sauté onions. Add potatoes next, then water
  • Allow potatoes to cook.
  • Add coconut milk and all other ingredients
  • Stir and let simmer
  • Eat and Enjoy to the glory of God!-1 Corinthians 10:31
