Who would have thought?! A mound of healthy deliciousness could be piled into every morsel! And the varied tastes and textures give this low-maintenance dish an extra edge.

Total Time 1 hour 11 minutes

Ingredients
  

Cooked Beans

  • 3 cups pinto beans dry
  • 7 cups water (for cooking beans)
  • 1 Tbsp onion powder
  • 3/4 tsp garlic powder
  • 3/4 tsp cumin
  • 2 1/4 tsps salt sea salt

Haystacks

  • 1 bag corn chips (not entire bag; use for the first layer of the Haystack)
  • 6 suggested toppings :  shredded lettuce, chopped tomatoes, finely diced onions, chopped black (or green) olives, brown rice, salsa, Cashew "Cheese", and Soy Mayo.

Instructions
 

Cooked Beans

  • Soak beans overnight in a generous amount of water.
  • On the following morning, rinse and drain beans.
  • Place soaked beans into a pot with 7 cups of water.
  • Bring to a boil, reduce heat, cover and simmer until beans are tender. (You may need to add more water. Please use your best judgment.)
  • When beans are tender: strain any excess water (if necessary), add remaining ingredients (except corn chips and toppings), and stir together well.
  • To blend flavors, simmer for several more minutes; then remove from heat.

Haystack Assembly

  • Place Corn Chips on plate.
  • Spoon beans on top of the chips.
  • Layer with the suggested toppings, as desired.
  • Eat and Enjoy - to the Glory of God! (1 Corinthians 10:31)
