Jewel's Cookies

Fortified with loads of vitamins and minerals, with the almonds as the backbone of the batter; these little gems have earned the right to be hailed as both healthy and delicious!

  • Pre-heat oven, temperature set to 350° F.
  • Place the flour, arrowroot, salt, cane sugar, Ener-G baking powder, and 1 cup of the almonds in a food processor. Blend for one minute.
  • Add the remaining cup of almonds and blend for 10 seconds.
  • Empty the mixture into a bowl and stir in the remaining ingredients.
  • Spoon the batter equally onto a cookie sheet until 12 cookies are formed. OPTIONAL: Although this is not required, we recommend lining your cookie sheet with parchment paper (if you have any) before spooning the batter on the sheet. This will ensure your cookies slide right off the sheet when they come out of the oven!
  • Bake at 350° F, for about 12-15 minutes (see note below for more details).
  • Eat and Enjoy - to the Glory of God! (1 Corinthians 10:31)

Notes

For a softer, chewier cookie, bake for 12 minutes; and 15 minutes for a harder, crunchier cookie. Both textures are equally good, and both contribute to their own respective distinctly scrumptious flavor!
Our suggestion: try one half of the current batch for 12 minutes and keep the other half in for 15 minutes... then come back and let us know which you like the best!
