Kale Pesto

A delicious, creamy, kale pesto!


  • 2 cups kale steamed and roughly chopped
  • 1 cup scallions chopped
  • 1 cup cashews toasted
  • 2 tbsp saucy ranch dressing seasoning The Vegetarian Express
  • 1/4 cup rice milk
  • 2 cloves garlic roasted
  • 1 tsp sea salt
  • 2 tbsp lemon juice
  • 1 tsp olive oil
  • 1 tsp pepper-like seasoning The Vegetarian Express
  • 1 tsp sesame seeds


  • Place kale and scallions in a food processor and pulse until chopped. Add cashews, saucy ranch dressing seasoning, rice milk, and garlic to kale mixture and pulse again to combine.
  • Combine sea salt, lemon juice, oil and pepper-like seasoning. Slowly add to kale mixture and pulse until smooth.
  • Stir in sesame seeds and serve with warm falafel.
