
Kale Pesto
Ingredients
- 2 cups kale steamed and roughly chopped
- 1 cup scallions chopped
- 1 cup cashews toasted
- 2 tbsp saucy ranch dressing seasoning The Vegetarian Express
- 1/4 cup rice milk
- 2 cloves garlic roasted
- 1 tsp sea salt
- 2 tbsp lemon juice
- 1 tsp olive oil
- 1 tsp pepper-like seasoning The Vegetarian Express
- 1 tsp sesame seeds
Instructions
- Place kale and scallions in a food processor and pulse until chopped. Add cashews, saucy ranch dressing seasoning, rice milk, and garlic to kale mixture and pulse again to combine.
- Combine sea salt, lemon juice, oil and pepper-like seasoning. Slowly add to kale mixture and pulse until smooth.
- Stir in sesame seeds and serve with warm falafel.
