
Lemon Pound Cake
Ingredients
- 3 cups all-purpose flour
- 2 cups cane crystal
- 1 tsp salt
- 1 tbsp Ener-G baking powder
- 2 tbsp lemon juice
- 2 lemon zest
- 1 can coconut milk
- 1/2 cup veg. oil
- 1 tsp vanilla
Instructions
Lemon Pound Cake
- Preheat oven to 325 F.
- Mix wet ingredients in a bowl.
- Mix dry ingredients in another bowl.
- Mix wet ingredients into dry ingredients.
- Add lemon zest.
- Line a cake Bundt pan with parchment paper.
- Poor cake batter into pan and bake for 70 minutes.
Lemon Glaze
- Mix powder cane sugar with 1-2 tbsp. of lemon juice and then glaze over cake.
- Eat and Enjoy-to the glory of God! (1 Corinthians 10:31)
This cake is the best lemon cake I have had. It very quick and easy to make. It is also a great addition to the Sabbath fellowship meal. The members at my church absolutely love this cake. Thank you MOL for this genius creation!

A very nice tasting desert. Very easy to make and oh so yummy! My family and I really enjoyed it. This recipe is going into my recipe binder. Will definitely be making it again soon. By the way I substituted vegetable oil for coconut oil. Wished I had made two of them. Thank you for the recipes.
