Lentil Loaf

This savory loaf has just the right combination of textures and mild flavor to easily replace a traditional family staple; with much more protein packed in every bite, it's bound to be a favorite!
Prep Time 5 minutes
Cook Time 45 minutes
Total Time 1 hour 35 minutes
Servings 1 8x8 Casserole


  • 2 cups lentils cooked
  • 1 cup walnuts chopped
  • 1 1/2 cups breadcrumbs whole wheat
  • 1 medium onion chopped
  • 3 Tbsps nutritional yeast flakes
  • 1 cup soy milk or cashew milk (unsweetened)
  • 1/2 cup flax gel or egg-replacer (to equal 2 eggs)
  • 1/4 cup oil
  • 1 tsp salt sea salt
  • 1/2 tsp sage


  • Preheat oven; temperature set for 350° F.
  • Combine all ingredients well and pour into oiled casserole dish.
  • Bake for 45-60 minutes at 350°F.
