- Place peaches and dates in bottom of 8" x 8" baking dish. Spread oats and sprinkle nuts over oats.
- Mix together soy milk, vanilla, and salt, and pour over oats. Sprinkle coconut on the top.
- Bake at 375 degrees, for 40 minutes; or until top is golden brown.
