Some Caribbean flavor for you to savor! prep time10 minutes cook time27 minutes passive time INGREDIENTS 1 can red kidney beans2 cups coconut milk2 Tbs. coconut oil3 cloves garlic1 cup water2 green onions chopped1 scotch bonnet pepper DO NOT CUT2 sprigs thyme fresh1 tsp. sea salt2 cups hydrated brown rice INSTRUCTIONS Drain kidney beans (Drain liquid from beans into measuring cup) In a heavy bottom pan on a med - high heat, heat coconut oil and sauté garlic and onion for about 2 minutes Add kidney beans and sauté for another two minutes Add liquid from beans and coconut milk along with thyme and hot pepper Bring to a boilAdd rice and bring to a boil Add water Lower heat and simmer till all liquid has evaporated and rice is fully cooked (approx. 25 minutes)(15 minutes into simmer, take a spatula and fluff the rice a little) ServeEat and Enjoy-to the glory of God!
