The Body and Its Needs-Part 2


In today’s class we will learn the value of a plant-based diet, and why it is more conducive to health than a diet consisted of meat and animal products. Something better is the watchword! In addition, discover some spiritual things to consider as it relates to Jesus’ position and work in the Most Holy Place and the system of living demostrated in Eden!


Without Animal Products

That it is possible to secure a balanced ration without any animal product, and that no health hazard is involved if one is well informed, has been definitely stated by no less an authority than E.V. McCollum, Ph.D., Professor of Biochemistry of the School of Hygiene and Public Health, Johns Hopkins University, Baltimore, Maryland.

‘From the foregoing (a preceding discussion) it will be evident that both human and animal experience with the fleshless diet, and the result of modern scientific studies on foods and nutrition, afford abundant evidence that meats are not necessary in the diet. It is even possible, – if the food is selected with a thorough knowledge of the defects of individual foods, and of their supplementary values—their power to make good each other’s deficiencies to secure a human dietary which would be fairly satisfactory without either milk or eggs, but there is a certain hazard to health in attempting to do so without expert knowledge.’‘Animal foods, including dairy produce, are not necessary in the diet. Not only are vegetable foods sufficient, but they are more conducive to health.


During recent years there has been a widespread hunt for proteins, and the food scientists are surprising themselves by discovering that many common foods contain proteins of high biologic quality which they previously thought were to be found only in meats, eggs, and milk. Among the foods now listed as containing excellent proteins are potatoes, the soybean, wheat, corn, rice, as well as certain nuts and leafy vegetables. An example of statements now appearing in public print is the following, found in Time, September 27, 1943:


‘Soybeans. Rivaling meat in protein and other food elements the edible varieties of soybeans can be served in a great variety of dishes, from milk shakes to steak (Properly minced soybeans may sometime be mistaken for meat loaf). Soybeans are only one fourth as expensive as beefsteak.’

In a more recent article, found in Huffington post, February 28, 2018 titled, Vegetarian Protein Is Just As ‘Complete’ As Meat, Despite What We’ve Been Taught, mentions:

“Dr. Michael Greger explains… that all nutrients come from the sun or the soil. Cows, for example, get their nutrients from the sun and from plant-based foods like grass and hay. So if cows eat plants, and plants provide cows with all the nutrients they need, why would we assume steak is a more complete than the food that provides the steak with its nutrients? The answer: We shouldn’t.

This point will be much more fully discussed in later classes. Over forty years ago the dangers and problems of the present day were forecast and counsel was given concerning them. In 1902 the following instruction was published for the guidance of those who are working in the front ranks of reform in living in the interest of better health:

‘Let the diet reform be progressive. Let the people be taught how to prepare food without the use of milk or butter. Tell them that the time will soon come when there will be no safety in using eggs, milk, cream, or butter, because disease in animals is increasing in proportion to the increase of wickedness among men. The time is near when, because of the iniquity of the fallen race, the whole animal creation will groan under the diseases that curse our earth.’

Thought Question: Has the time come? Does the position and work of our great High Priest have anything to do with the timing?



Two Levels of Living

Many people are allergic to milk or to eggs; many babies cannot tolerate cow’s milk; there are many adults with whom milk does not agree for various reasons, some of which will be discussed in this school.

There are still other people who, because of the increase of diseases among animals, and possibly other reasons, prefer not to use any animal product—milk, cream, butter, or eggs—and are earnestly looking for detailed information showing them how to obtain a scientifically complete ration without such animal products. This treatise undertakes to provide such a program of living without danger of deficiency.

This way of living is a protection against disease. The Automatic Menu Planner in the next class covers both ways of living. Those who do not wish to use any animal products will find substitute foods listed in the same groups, so that every user of the Menu Planner may live according to the method of his choice.

Doubtless the food presenting the most serious obstacles to those who consider deleting it from their menus is cow’s milk. In the Menu Planner, soybean milk is offered in its place. Some other options are nut milks! A more detailed discussion of the problems involved in the milk question will be found in a later section of this school. Soybean cream is now available in place of dairy cream; soy cheese may be substituted for cottage cheese. Commercial butter substitutes are increasing in variety.

Adventures in Food Flavors

When making changes from foods to which we have long been accustomed, to a new way of living, we should not expect to duplicate the flavors of the foods we leave behind, but should look for new flavors, and delights. If we look for exact duplicates of the old tastes, we may be disappointed; but if we are looking for something new, we will find flavors in the new foods every bit as delightsome as the old ones, and some of them far better. It is like entering upon a new adventure.
